Happiness on a plate

I got a slow cooker for my birthday a couple of weeks ago. I’ve been considering getting one for ages as I really like the idea of being able to put it on in the morning and not have to think about preparing food when I’m tired and busy at the end of the day.  However, I didn’t want it to be one of those appliances that end up un-used at the back of the cupboard but I decided to take the plunge and I am so happy I did!
I cooked our first meal in it tonight and it was amazing! (even if I do say so myself!)
This morning I chopped a few vegetables and tossed in some meat and stock and eight hours later was able to serve up a delicious stew with meltingly tender meat and delicious gravy. It was so easy as I didn’t even bother to brown the veg and meat first (I think it’s meant to improve the flavour).
It’s also a good option for feeding a crowd as you can buy cheaper cuts of meat because you’re cooking it for longer.
I can see this making entertaining guests and feeding a husband with an erratic timetable a much simpler task in the future.

Beef and Mushroom Casserole
650g lean stewing beef cut into cubes
1 tbsp plain flour
2 medium onions, finely chopped
350g carrots, thinly sliced
450g potatoes, thinly sliced
2 celery sticks, thinly sliced
1 tbsp tomato puree
1 litre beef stock
150g button mushrooms
2 tbsp finely chopped fresh parsley
1. Preheat your slow cooker to HIGH.
2. Toss the beef in the flour until well coated.
3. Put the chopped vegetables in the bottom of the slow cooker, and add the beef and the rest of the ingredients (except the parsley) on top.
4. Put the lid on a cook on LOW for 7-10 hours
5. Before serving stir well, adjust seasoning to taste and scatter parsley on top.
6. Enjoy!
