30 Minute Meal

You know you sometimes see those '30 minute meals’ advertised?  The ones where they claim that a main course and dessert can be made in only 30 minutes, but actually that’s only if you’re a TV cook and everything has already been prepared and laid out in front of you?
Well the other day I stumbled upon two recipes that were actually pretty close to only taking 30 minutes to prepare, and they were super tasty too.
If you’re looking for a meal idea this weekend, I have just the thing…
Stir Fried Prawns with Peppers and Spinach followed by mini Strawberry Cheesecakes.



For the Dessert:
·      85g ginger crunch biscuits
·      100g tub extra-light soft cheese
·      5 tbsp Greek yogurt
·      4 tbsp caster sugar
·      3 drops vanilla extract
·      2 tbsp strawberry jam
·      100g strawberries, hulled and sliced

Put the biscuits in a plastic bag and bash with a rolling pin until you have chunky crumbs. Divide between 2 or 3 glasses or small bowls.

Beat the soft cheese, yogurt, sugar and vanilla together until smooth, then spoon over the crumbs and chill until you are ready to serve.

Stir the jam in a bowl until loose, then gently stir in the strawberries. Divide the strawberries between the cheesecakes and chill until ready to serve.


For the main:
·      3 tbsp groundnut or sunflower oil
·      1 small red pepper, cored, deseeded and thinly sliced
·      200g pack raw prawns
·      2 tbsp soy sauce
·      100g bag baby spinach leaves
·      Noodles or spaghetti

Cook the noodles or spaghetti according to pack instructions.

Heat 2 tbsp oil and toss in the pepper and stir-fry for 1 min or so until softened, then toss in the prawns and stir-fry for another 2-3 mins until cooked and beginning to brown. Add the soy sauce.




Throw in the spinach and stir-fry until it begins to wilt. Add the noodles/ spaghetti, give it all quick stir then serve immediately.
