Toffee Choco Muffins

Due to popular demand here is my Chocolate Muffin Recipe.


{For those of you who weren’t sure what Thornton’s Toffee Choc balls were – they are basically rounds of toffee surrounded in Chocolate. Thornton’s is a mid-price chocolatier so their produce is nicer than your average supermarket stuff, but to be honest if you’re putting them into muffins it probably doesn’t make that much difference. It’s probably the size that makes the most difference (smaller balls tend to melt or burn to the bottom) so that’s the thing to look out for.}
Toffee Choco Ball Chocolate Muffins
-          250g Self Raising Flour
-          25g Cocoa
-          2 tsp baking powder
-          175g Caster Sugar
-          175ml Milk
-          2 large eggs
-          100ml sunflower oil
-          75g Dark and Milk Chocolate Chips
-          1-2 tsp vanilla extract
-          12 Thorntons Toffee Choco Balls

1. Preheat the oven to 180C and line a muffin tin with cases

2. Sift the flour, cocoa, baking powder into a bowl and gently stir in the sugar. Stir in the other ingredients until mixed and smooth.



3. Spoon a dessert spoon of mixture into each case and then put a choco ball on top. Top up each case until it’s about 2/3rds full.

4. Bake for 20 mins and enjoy.

  3. YUM YUM!! The fact that I'd have to work to convert the measurements is a huge help to my on-again diet these days. If I didn't have to do the math, I'd be All Over These!! Thanks for the recipe. I'll store it away for a little treat later. :)
