Leeky Salmon

I’ve been ranting about this recipe to all and sundry because it is SO SIMPLE!
I’d planned to make it last week, but hadn’t actually looked at the recipe. When I came to make it I was in a huge rush and so was pleasantly surprised to find it only takes 5 minutes to cook.

Yes you did hear that right! 5 minutes...and it’s so tasty!

Leeky Salmon in a parcel – serves 2
(from bbc good food)

  • Salmon fillets, 140g/5oz each

  • 1 medium or 2 small leeks , about 200g/8oz in total

  • 50g frozen petits pois

  • 4 heaped tbsp crème fraîche , plus 2 tbsp to serve

  • 1 tbsp chopped fresh tarragon

1. Season the salmon fillets all over. Slice the leeks really thinly. Cut two 40cm square sheets of greaseproof paper and put a fillet in the middle of each sheet.

2. Top each fillet with leeks and peas, and 2 tbsp of crème fraîche. Sprinkle with tarragon and salt and pepper.

3. Make up parcels with the paper and stand them on a microwave-proof plate or tray. Microwave on full power for 5 minutes. Put the contents of the parcels on two plates and top each serving with a spoonful of crème fraîche. Serve with new potatoes.

Right, I’m off to climb a mountain. Happy Thursday!

  1. Except for the fact that I don't like salmon, this looks yummy!!
I could cook this: MJ would eat the salmon and I would eat the rest of the ingredients! Ha!
