Super Speedy Supper

Here’s what we had for tea tonight…

 

Pasta in a bag
Serves 2 (Easily doubled)

-          2oog Tagliatelle
-          4 tbsp green pesto
-          2 tsp extra virgin olive oil
-          240g prawns
-          1 garlic clove, crushed
-          White wine
-          Salt and Pepper

1.  Cut out two 30cm squares in greaseproof paper

2. Cook the Tagliatelle in boiling salted water for about 5 minutes, or until soft

3. Drain the pasta and stir in half of the pesto.

4. Put one tsp of olive oil into the middle of each of the squares of greaseproof paper and spread it out with the back of a spoon. Divide the pasta between the parcels.

5. Spoon the prawns on top of the pasta mixture. Season.

6. In a bowl combine the rest of the pesto with the crushed garlic and spoon it over the top of the pasta and prawns. Sprinkle with a little white wine.

7. Dampen the edges of the paper squares and wrap the parcels up, twisting the edges.

8. Place on a baking sheet and put in a preheated oven (200⁰C/ 400⁰F/Gas 6) for 15 mins.

9. Unwrap and enjoy with a side salad
